Get ready--this menu is laden with heavy doses of state culinary pride. Sit back, sip a Texas-sized margarita and munch on crispy, but not-too-spicy Mexican Bullets (jalapeno poppers), and you too may find yourself humming "The stars at night ...."
Yee-haw: All This and Value Too
What makes The Republic of Texas a fine place to prop up one's boots is that it doesn't pretend to be anything more than a decent meal served under canopies of Texas flags. You'll find an affordable dinner as well as a mean bowl of tortilla soup served with smatterings of fresh tomato, crispy tortilla chips and melted cheese. Speaking of cheese, the enchiladas rojo are smothered in artery-clogging delight and stuffed with mixin's--a Surgeon General's warning should accompany their menu listing. Stick to the Republic's Tex-Mex and you'll be, as they say down here, happy as a hog in slop.

This restaurant had by far the worst service I have ever had. I went there with a couple friends thinking it would be fun. We waited thirty minutes for a table, which was not a big deal until we were seated next to three empty tables. Still not too bad until I had to request a waitress after about fifteen minutes or so. The food was not bad, but not excellent by far. We were going to have a some drinks after dinner, but the waitress brought our ticket right after we finished eating. Then, when she brought back our cash and cards, she kept asking us if were going to tip her. ??? I would not recommend this place to anyone!
Pros: The drinks where decently priced.
Cons: The service was horrible!

Me and a friend went to this restaurant the other day, expecting a great meal, and it was so far from that. He ordered a T Bone steak, which resembled a pork chop and wasnt good at all, especially for 20 bucks. I ordered beef quesadillias which was disgusting. It consisted of ground meat , which was tasteless, and the cheese which was gloppy. The sour cream was melted, since it probably sat there for about 20 mins. The only good thing was, the margaritas. The service was very poor, was hard getting a refill on our drinks, and we waited for more than a half hour to get our meals. So, we will never go back to this place again, and will advise our friends and family not to go as well. Way too expensive for disgusting food!
