Hoover's is a southern comfort experience hard to find in Austin these days. Perhaps a little heavy on the heat (spice), but that's part of the tradition. Collard greens made like my granny made, jalepeno spinach casserole that can both inspire and catch you on fire and some good cajun cuisine that needs to keep on growin in Austin. I was however, a little dissapointed with the boudin special. A little too dry guys. Now, I'm gonna defend these Hoover's a little and perhaps educate some previous comments made concerning a split charge. This is real estate and people gotta pays the bills and make a living. Your tip and those extra charges are there to make sure everyone is taken care of and all the bills are paid. Sitting down for two hours in a restaurant and ordering only a cup of coffee (strictly hypethetical) means people are loosing money. Hoover's is doing what every restaurant on the planet is trying to do...survive. Next time just share something. Don't ask them to split it. The more work work the restaurant and it's employees have to do for you means extra costs. It's cheaper if you do it yourself.

Wife and I ate at Hoovers on Saturday. Not too crowded even at 12:00. Very informal. I had the smothered pork chops, which were great. Fork tender and delicious. Wife had the meatloaf. Another winner! The sides we ordered, potato salad and macaroni & cheese, were very good. I especially liked the sweet potato buscuits. A wonderful sweet taste along with the nicest soft texture made these the best I've ever eaten! I could have loaded down on these alone and been happy!
